Natural Wines: Are They Any Good?

The average person can't taste or smell sulfur dioxide or alcohol, but people with respiratory problems may experience symptoms such as coughing, chest pain, and shortness of breath when exposed to high levels of these gases is excessive. In 2000, the Food and Drug Administration (FDA) enacted regulations requiring that all wines containing more than 3 mg/L of sulfites be labeled as such. Wines labeled "sulfite-free" must contain less than 2 mg/L of sulfites.

There are two reasons why wine with a low sulfite level may be better for people with respiratory problems. First, when sulfites are present in the wine, they can react with other compounds in the wine that causing a burning sensation in the mouth.

Second, sulfur dioxide is a common food preservative and some people may be sensitive to it. This is not likely to be an issue with naturally occurring sulfites. This is because there is no more natural occurrence of sulfur dioxide than in volcanic eruptions. In fact, volcanoes produce more sulfur dioxide (and therefore sulfite) than all wine-producing nations combined.
